Kolhapuri chicken in crockpot
I made this last week and it turned out fabulous.
- 2.2 lb chicken thighs (skinless, boneless), each thigh cut up in 2
- 2 small potatoes, small dice
- 1 onion, fine dice
- 1 cup shredded dry coconut
- 1 tbsp coriander-cumin powder
- 1 tbsp ginger
- 1 tbsp garlic
- 1 tsp each of whole spices - black pepper, cinnamon, cloves, cardamom
- 2 tbsp chili powder
- 2 tsp salt
- 1 1/2 cups water
