Minestrone

Ingredients:
  • 1 lb frozen veggies (Italian Blend works best)
  • 1 heaping cup whole wheat macaroni (dry)
  • 1 14 oz can of diced or pureed tomatoes
  • 1 14 oz can of beans (pinto or lima)
  • 1 onion, chopped
  • oil
  • 1 tbsp minced garlic
  • 1 tbsp Italian seasoning
  • salt (and soy sauce) to taste
  • 6 to 8 cups of water, boiling
Saute onion in oil. When translucent add garlic & seasoning and saute for 30 seconds. Add tomatoes and cook for 4 minutes. Add rest of the ingredients and bring to a boil. Lower heat & simmer until pasta is done, 15 to 20 minutes.
