Kolhapuri chicken in crockpot

I made this last week and it turned out fabulous.
  • 2.2 lb chicken thighs (skinless, boneless), each thigh cut up in 2
  • 2 small potatoes, small dice
  • 1 onion, fine dice
  • 1 cup shredded dry coconut
  • 1 tbsp coriander-cumin powder
  • 1 tbsp ginger
  • 1 tbsp garlic
  • 1 tsp each of whole spices - black pepper, cinnamon, cloves, cardamom
  • 2 tbsp chili powder
  • 2 tsp salt
  • 1 1/2 cups water
Add to the crockpot: onions, potatoes and chicken. Roast coconut and add. Roast whole spices and add. Add rest of spices, salt and water. Cook on HIGH for 5 1/2 hours, stirring once after about 4 hours.
