Slow Cooker Chicken Vindaloo

I made this yesterday and it came out very good.

Add to the slow cooker:
  • 3 lb chicken thighs
  • 2 medium potatoes diced
  • 1 onion chopped
  • 1 large can of crushed tomatoes
  • 2 teaspoons chili powder
  • 1 teaspoon cumin seeds
  • 2 teaspoons minced garlic
  • 2 teaspoons minced ginger
  • salt to taste
All that plus six hours gets you a mean vindaloo curry.

Next time I will use boneless thighs, more chili powder and cumin powder.
