Gawaar-Batata in Slow Cooker

Gawaar-Batata is one of my favorite Marathi dishes. Gawaar (also spelled as Goovar) is a type of green bean. I had not connected that the Gawaar I knew and loved was related to Guar Gum, that ubiquitous food additive!

Gawaar is very tough and takes a long time to cook. I thought the slow cooker might work out. And it did.

Ingredients:
  • 1 packet frozen Gawaar
  • about equal volume potatoes, diced small
  • 1 1/4 cups water
  • gur (alternatively sugar)
  • 1 heaping tbsp Goda Masala (alternatively Garam Masala)
  • 2 tsp salt
  • 3 tbsp oil
  • 1/2 tsp mustard seeds
  • 1 tsp turmeric
Add the first 6 ingredients to the slow cooker. Heat oil in a small pan and add mustard seeds. Once the seeds start popping, add the turmeric and stir. Cook for 15 seconds and add to the slow cooker. Cook on High for 5 to 6 hours until the Gawaar is cooked.
